  • 5 cups cornflakes (crushed)
  • 2 pounds chicken breasts (cut into small cubes)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup buttermilk
  • 3/4 cup BBQ sauce
  • 1/4 cup honey

Instructions

  1. Preheat oven to 400F (200C).
  2. In a bowl, combine crushed cornflakes, salt, pepper, paprika, chili flakes (optional), garlic powder, and onion powder.
  3. In another bowl, whisk together the eggs and buttermilk.
  4. Lightly coat chicken pieces in flour, dip in the egg mixture, then coat with the cornflake mixture.
  5. Arrange chicken on a parchment-lined baking tray and bake for about 15 minutes until golden brown.
  6. While baking, mix BBQ sauce and honey in a saucepan over medium heat until blended.
  7. Toss baked chicken bites in the honey BBQ sauce and serve immediately.
