  • 1 fish fillet (cod or tilapia)
  • 2 cups cherry tomatoes
  • cup olives
  • Fresh parsley and thyme
  • Garlic cloves, minced
  • Olive oil
  • Paprika
  • Italian seasoning
  • Cajun seasoning
  • Chili flakes
  • Salt
  • Pepper
  • 3 tbsp cooking oil
  • 3 tbsp salted butter
  • 2 tbsp water

Instructions

  1. Preheat your oven to 400F.
  2. In a small bowl, combine paprika, Italian seasoning, Cajun seasoning, chili flakes, salt, and pepper.
  3. Rub both sides of the fish fillet with the spice mixture.
  4. Heat olive oil in a skillet over medium heat and sear the fish for about 1 minute on each side until charred but not cooked through.
  5. In the same skillet, add cherry tomatoes, olives, garlic, parsley, thyme, and water; saut for about 3 minutes.
  6. Place the seared fish back into the skillet. Add butter on top and transfer to the oven.
  7. Bake for approximately 10 minutes or until the fish is opaque and flakes easily.
