  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves garlic, minced
  • 8 ounces feta cheese
  • 4 large eggs
  • 4 tablespoons olive oil
  • 1 teaspoons dried oregano
  • 1 teaspoons sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes
  • 1 cup chopped baby spinach

Instructions

  1. Preheat your oven to 400F (200C).
  2. In ramekins or a baking dish, layer the tomatoes, bell pepper, onion, garlic, and crumble feta on top. Drizzle with olive oil.
  3. Combine seasonings and sprinkle over the mixture.
  4. Bake for 25 minutes until vegetables are tender.
  5. Stir in chopped spinach and create wells for the eggs; crack an egg into each well.
  6. Return to the oven and bake for another 10 minutes or until eggs are set.
