  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 1 large egg
  • Splash of milk
  • 2 1/2 cups sweetened coconut flakes
  • 1/4 cup unsalted butter (melted)
  • 1/2 cup apricot jam
  • 2 tablespoons Dijon mustard

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Set up three shallow bowls: combine flour, garlic powder, salt, and pepper in one; whisk egg and milk in another; place coconut flakes in the third.
  3. Dredge each chicken tender in the flour mixture, dip in the egg mixture, then coat with coconut flakes. Place on the baking sheet.
  4. Drizzle melted butter over coated tenders and bake for about 22 minutes, flipping halfway through until they reach an internal temperature of 165°F (74°C).
  5. For the dipping sauce, mix apricot jam and Dijon mustard in a bowl and refrigerate until serving.
