  • 8 slices bacon (chopped)
  • 1/2 yellow onion (chopped)
  • 1/2 cup ketchup
  • 1/4 cup tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon dijon mustard
  • 1 cup beer (preferably Guinness)
  • 1/2 cup beef broth
  • 2 cups sharp cheddar (cubed)
  • 6 brioche buns

Instructions

  1. In a large skillet over medium-high heat, cook bacon for 23 minutes until crispy yet bendable.
  2. Remove bacon and drain excess fat, retaining two tablespoons in the pan. Saut chopped onions for 45 minutes until softened.
  3. Add ground beef to the skillet; lower heat to medium and cook until browned, breaking it into chunks.
  4. Stir in ketchup, tomato paste, Worcestershire sauce, dijon mustard, beer, and beef broth; cook for another 56 minutes until thickened.
  5. Mix in cheddar cheese and bacon crumbles just before serving.
  6. Toast brioche buns lightly and spoon the mixture generously onto each bun.
