  • 4 dried ancho chiles

  • 1 tbsp cumin seeds
  • 4 cups beef broth

  1. Prepare the chiles by removing stems and seeds, then simmer in water for about 10 minutes until tender.
  2. Blend the softened chiles with garlic, toasted cumin seeds, salt, pepper, and 2 cups of beef broth until smooth.
  3. Heat oil in a large pot over medium-high heat; sear the beef chuck roast until browned on all sides (about 6 minutes).
  4. Pour the blended sauce over the meat, add another 2 cups of beef broth, and bring to a simmer.
  5. Reduce heat to low, cover tightly, and cook for approximately 3 hours until fork-tender.
