  • ¼ head purple or green cabbage
  • Sesame ginger dressing (made with garlic, ginger, soy sauce, peanut butter, maple syrup)

Instructions

  1. Cook the grains: In a small pot, bring 1¾ cups water to boil. Add quinoa and millet with salt; reduce heat to low, cover, and simmer for about 25 minutes. Let stand off heat for 10 minutes.
  2. Roast the broccoli: Preheat oven to 400°F. Toss broccoli florets with olive oil, smoked paprika, salt, and pepper on a baking sheet. Roast for 20-25 minutes until crispy.
  3. Prepare the dressing: Whisk together garlic, ginger, oils, vinegar, soy sauce, peanut butter, maple syrup in a bowl.
  4. Massage kale: Drizzle kale with dressing and massage until wilted.
