  • 1 1/2 cups butter (room temperature)
  • 3/4 cup light brown sugar
  • 3/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 3 1/2 cups all-purpose flour
  • 1 1/2 cups apricot jam
  • Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 325F and spray a 9×13 inch pan with nonstick spray.
  2. In a large bowl, cream together the butter, light brown sugar, and granulated sugar using an electric mixer until creamy. Mix in vanilla extract and salt.
  3. Gradually beat in flour until combined to form a smooth dough.
  4. Divide the dough in half; refrigerate one half for about 30 minutes and press the other half into the bottom of the prepared pan.
  5. Bake the crust for about 20 minutes or until lightly golden.
  6. Spread apricot jam over the crust and crumble the chilled dough on top.
  7. Bake for an additional 30 minutes until topping is firm and golden.
  8. Allow bars to cool completely before slicing and dust with powdered sugar.
