  • 30 g brown sugar
  • 2 teaspoons cornstarch
  • 1 teaspoon ground cinnamon
  • 50 g water
  • 185 g cake flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 115 g unsalted butter (softened to room temperature)
  • 200 g granulated sugar
  • 3 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 150 g milk (dairy or non-dairy)
  • 60 g unsalted butter (softened to room temperature)
  • 125 g cream cheese (softened to room temperature)
  • 75 g powdered sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the apple filling by cooking diced apples with brown sugar, cornstarch, cinnamon, and water until thickened.
  2. Preheat your oven to 350F (175C) and line muffin tins with cupcake liners.
  3. In one bowl, whisk together dry ingredients (cake flour, baking powder, cinnamon, salt). In another bowl, cream butter and sugar until fluffy; add eggs and vanilla.
  4. Gradually combine wet and dry ingredients with milk until just mixed.
  5. Fill cupcake liners halfway with batter, add apple filling, then top with more batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. For frosting: beat softened butter and cream cheese, then mix in powdered sugar and cinnamon until smooth.
  8. Frost cooled cupcakes generously.
