  • 2 kg sweet apples (Fuji, Royal Gala, or Pink Lady)
  • 150 g granulated sugar (for apples)
  • 150 g granulated sugar (for custard)
  • 600 ml milk
  • 4 egg yolks
  • 2 tbsp cornstarch
  • 50 g granulated sugar (for custard)
  • 1/4 tsp salt
  • 2 tsp vanilla bean paste

Instructions

  1. Preheat your oven to 180°C (350°F). Peel, core, and slice the apples thinly.
  2. Mix apple slices with 150 g sugar and let sit for 15 minutes.
  3. Transfer the apple mixture to a baking dish and bake for about 30 minutes until tender.
  4. In a saucepan, heat milk with 50 g sugar and salt until just below boiling.
  5. In a bowl, whisk egg yolks and cornstarch together; gradually add hot milk while whisking.
  6. Return the mixture to the saucepan, cooking over low heat until thickened.
  7. Layer baked apples in a dish, pour custard over them, and repeat layers as desired.
  8. Chill for at least one hour before serving.
