  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg (optional)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (room temperature)
  • 1/4 cup sour cream (or Greek yogurt) (room temperature)
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • 1/2 cup milk (room temperature)
  • 1 1/2 cups diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat the oven to 400F (200C) and line a muffin tin with paper liners.
  2. In a bowl, combine flour, sugars, cinnamon, and melted butter for the crumble topping; set aside.
  3. In another bowl, whisk together dry ingredients: flour, baking powder, salt, cinnamon, and nutmeg.
  4. Using an electric mixer, beat together light brown sugar, granulated sugar, and butter until fluffy; add eggs, sour cream, and vanilla extract.
  5. Combine dry ingredients with wet ingredients; fold in diced apples.
  6. Fill muffin cups three-quarters full with batter and sprinkle crumble topping on each.
  7. Bake for 20 minutes or until a toothpick comes out clean; cool before serving.
