  • 17 g plain flour
  • 1/8 tsp cinnamon
  • 175 g unsalted butter (softened)
  • 175 g light brown soft sugar
  • 3 large eggs
  • 175 g self-raising flour
  • 1/2 tsp cinnamon
  • 1/4 tsp mixed spice
  • 175 g unsalted butter (softened)
  • 350 g icing sugar
  • 1 1/2 tsp cinnamon
  • 23 tbsp milk

Instructions

  1. Prepare the apple filling by peeling, coring, and chopping the apples. Cook with sugar and spices on low heat until soft.
  2. Mix flour, sugar, and cinnamon for the crumble topping; rub in butter until breadcrumb-like. Bake until golden.
  3. For the cupcakes, cream butter and sugar, add eggs one by one, then fold in dry ingredients. Bake until golden.
  4. Once cooled, core cupcakes to fill with apple filling. Frost with cinnamon buttercream and top with crumble.
