  • 2 teaspoons freshly squeezed lemon juice
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons light brown sugar
  • 1 1/2 teaspoons cornstarch
  • 1/3 cup all-purpose flour
  • 1/3 cup light brown sugar
  • 1/3 cup quick-cooking oats
  • 3/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 2 1/2 tablespoons unsalted butter, melted
  • Caramel sauce

Instructions

  1. 1. Preheat the oven to 325F (165C) and line a cupcake pan with paper liners.
  2. 2. Prepare the crust by mixing graham cracker crumbs, sugar, cinnamon, and melted butter; press into liners and chill.
  3. 3. Make the streusel topping by combining flour, brown sugar, oats, cinnamon, and nutmeg; refrigerate until ready.
  4. 4. Beat cream cheese with sugar until smooth; add vanilla, flour, and egg just until combined.
  5. 5. Assemble by filling each crust with cheesecake mixture, topping with apples mixed in spices and streusel.
