  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 1/2 cup softened butter
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1 small apple (peeled and chopped finely)
  • 2 tsp cornstarch
  • 1 tsp cinnamon (for rolling)
  • 2 tbsp granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350F (175C).
  2. In a bowl, mix flour, baking soda, and salt.
  3. In another bowl, coat chopped apples with cornstarch.
  4. Cream together softened butter, granulated sugar, and brown sugar until smooth; add egg and vanilla.
  5. Gradually blend in the dry mixture; gently fold in the coated apples.
  6. In a small bowl, combine cinnamon and sugar for rolling.
  7. Roll tablespoon-sized dough balls in the cinnamon-sugar mixture and place on a parchment-lined baking sheet.
  8. Bake for 10-12 minutes until golden brown; cool on a rack before serving.
