  • 2 1/2 cups graham cracker crumbs
  • 1/8 cup brown sugar
  • 10 tablespoons unsalted butter
  • 2 cups apple cider
  • 24 ounces cream cheese
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream
  • 1 teaspoon pure vanilla extract
  • 4 large eggs
  • 1/4 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon melted butter
  • 1 tablespoon apple cider
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat oven to 325°F (160°C). Mix graham cracker crumbs, brown sugar, and melted butter in a bowl. Press into a springform pan and bake for 10 minutes. Cool.
  2. In a saucepan, boil apple cider until reduced to 1/2 cup. Let cool.
  3. Beat cream cheese until creamy; add sugar, sour cream, eggs one at a time, vanilla extract, and cooled cider until smooth.
  4. Pour filling into crust and bake for about 80 minutes until set but jiggly in center. Leave in oven for an hour after turning it off.
  5. Brush with melted butter mixed with apple cider and sprinkle cinnamon sugar before chilling for at least four hours.
