  • 2 tablespoons neutral oil
  • 2 cups fresh apple cider
  • 2 cups chicken stock
  • 2 tablespoons Dijon mustard
  • 1 head of garlic
  • Fresh rosemary and thyme sprigs
  • 1 red onion, sliced
  • 2 firm apples, cut into wedges
  • Kosher salt
  • Freshly cracked black pepper

Instructions

  1. Preheat the oven to 325F (163C).
  2. Trim excess fat from the pork shoulder, then season with salt and pepper.
  3. Heat oil in a Dutch oven over medium-high heat; sear pork until browned on all sides.
  4. In a bowl, whisk together apple cider, chicken stock, Dijon mustard, and minced onion. Tie herbs with kitchen twine.
  5. Pour braising liquid over seared pork and add garlic and herb bundle; cover and bake for about 3 hours.
  6. After initial braising, add red onions and apple wedges; cover and return to oven for another 30-45 minutes.
  7. Let rest in liquid for 30 minutes before serving.
