Ingredients

Scale
  • 1 lb andouille sausage, sliced
  • 1/2 cup onion, chopped
  • 1/2 cup green bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 tbsp flour
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 tsp Cajun seasoning
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large skillet over medium heat, warm the vegetable oil. Add sliced andouille sausage; cook until browned (5-7 minutes). Remove sausage from skillet.
  2. In the same skillet, sauté onion, green bell pepper, and garlic until softened (3-4 minutes).
  3. Sprinkle flour over vegetables; stir to combine and cook for 1-2 minutes to make a roux.
  4. Gradually pour in chicken broth while stirring to avoid lumps; bring to a simmer and cook until thickened (5-7 minutes).
  5. Stir in heavy cream, Cajun seasoning, salt, pepper, and return cooked sausage to skillet; mix well.
  6. Simmer for an additional 5 minutes before serving hot.
