  • 2 sheets puff pastry (thawed)
  • 5 tbsp unsalted butter (softened)
  • 1 cup almond flour
  • cup granulated sugar
  • 2 tsp almond extract
  • 1 egg + 1 tbsp milk (for egg wash)
  • Sliced almonds (for topping)

Instructions

  1. Preheat your oven to 375F (190C) and line baking sheets with parchment paper.
  2. In a medium bowl, blend softened butter and one egg until creamy. Add almond flour, sugar, almond extract, vanilla extract, and salt; mix until smooth.
  3. Roll out one sheet of puff pastry on a floured surface and cut it in half lengthwise. Spread half of the almond filling on one rectangle while leaving a border.
  4. Brush edges with egg wash, place another rectangle on top, seal edges gently, brush the top with egg wash, and sprinkle with sliced almonds.
  5. Repeat the process with the second sheet of puff pastry. Bake for 2832 minutes until golden brown.
  6. Cool slightly before cutting into pieces and serve warm or at room temperature.
