  • 1 onion (chopped)
  • 3 garlic cloves (minced)
  • 2 stalks celery (finely chopped)
  • 1½ cups cubed potatoes
  • 2 carrots (peeled and chopped)
  • ½ cup dry green or brown lentils (rinsed)
  • 6 cups vegetable stock
  • ⅓ cup shredded cheddar
  • 2 tbsp sour cream
  • Thyme and marjoram

Instructions

  1. In a large pan over medium heat, sauté the onion, garlic, and celery in olive oil until translucent.
  2. Add cubed potatoes and carrots, season lightly, and sauté for an additional 1–2 minutes.
  3. Stir in the lentils, thyme, marjoram, and vegetable stock. Cover and bring to a boil before reducing heat to simmer for 25–30 minutes until lentils are soft.
  4. Remove from heat and let cool slightly before mixing in cheese and sour cream.
  5. For a creamier texture, blend part of the soup if desired. Adjust seasoning before serving.
