  • 1 cup jasmine rice
  • 1 block firm tofu
  • 2 tablespoons vegetable oil
  • 1 cup mixed vegetables (carrots, bell peppers, peas)
  • 3 green onions
  • 2 cloves garlic
  • 2 tablespoons soy sauce (or tamari)
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Cook jasmine rice according to package instructions and let cool.
  2. Dice tofu into small cubes and pat dry.
  3. In a large skillet over medium-high heat, sauté tofu in 1 tablespoon oil until golden brown (5-7 minutes). Remove from skillet.
  4. Add remaining oil, garlic, and mixed vegetables to the skillet; stir-fry for 3-4 minutes.
  5. Return tofu to skillet along with the cooled rice, soy sauce, and sesame oil; mix well for another 2-3 minutes.
  6. Toss in green onions and season with salt and pepper before serving.
