  • 1/2 lb jalapenos and serranos (57 chiles)
  • 1/4 onion
  • 1 garlic clove
  • 1/3 cup white vinegar
  • 1/4 cup water
  • Juice of 1/2 lime
  • 45 cilantro sprigs
  • 1/2 teaspoon Mexican oregano
  • Salt and pepper to taste

Instructions

  1. Rinse jalapenos and serranos, remove stems, and cut in half.
  2. Sauté chopped onion and garlic in a skillet until onion starts to brown.
  3. Stir in Mexican oregano, cumin (if using), salt, and pepper; cook for another minute.
  4. Add chiles, vinegar, and water; bring to a simmer.
  5. Transfer the mixture to a blender with cilantro and lime juice; blend until desired consistency is achieved.
  6. Store in an airtight glass jar in the fridge.
