  • 1/2 cup very cold unsalted butter
  • 11/4 cups all-purpose flour
  • 1/2 Tbsp organic cane sugar
  • 1/2 tsp fine grain sea salt
  • 3 cups sliced peaches
  • 1/4 cup light brown sugar
  • Juice of half a lemon
  • 1 tsp pure vanilla extract

Instructions

  1. To make the dough, combine flour, sugar, and salt in a mixing bowl. Cut in cold butter until crumbly. Stir in apple cider vinegar and gradually add ice water until dough holds together. Chill for at least 30 minutes.
  2. Preheat oven to 375°F (190°C).
  3. In another bowl, mix sliced peaches with brown sugar, lemon juice, vanilla extract, arrowroot starch, cinnamon, ginger, and a pinch of salt.
  4. Roll out chilled dough into a circle on floured surface and transfer to parchment-lined baking sheet.
  5. Spoon peach mixture onto dough center, leaving about 2 inches around the edges; fold edges over filling.
  6. Brush with egg wash (optional) and sprinkle with sanding sugar.
  7. Bake for about 45 minutes or until golden brown. Allow to cool slightly before serving.
