  • 1 pound fresh strawberries
  • 4 ounces feta cheese
  • 1/4 cup pistachios
  • 1 ounce fresh mint
  • 1 tablespoon olive oil

  • juice of 2 limes

Instructions

  1. Wash and slice the cucumber into ¼-inch coins. Sprinkle with salt and let drain in a colander for 10–30 minutes.
  2. While draining, wash and slice strawberries, crumble feta, crush pistachios, and prepare mint leaves.
  3. For the dressing, mix olive oil, honey, and lime juice in a bowl or mason jar; blend until smooth.
  4. Rinse cucumbers to remove excess salt and pat dry.
  5. In a large mixing bowl, combine strawberries, cucumbers, feta cheese, and dressing; toss gently.
  6. Chill for about 5 minutes before serving, then top with mint leaves and crushed pistachios.
