  • 1 pound lean ground beef
  • 1 medium onion (chopped)
  • 1 red bell pepper (chopped)
  • 3 cloves garlic (minced)
  • 2 tablespoons Italian seasoning
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 3 cups bone broth (or chicken/beef broth)
  • 1 can crushed tomatoes (28 oz)
  • 1 can petite diced tomatoes (15 oz, undrained)
  • 1 cup shredded cheddar cheese
  • 8 ounces elbow macaroni (cooked)

Instructions

  1. In a skillet over medium-high heat, brown the ground beef until cooked through. Drain excess fat and transfer to the slow cooker.
  2. Add onion, bell pepper, garlic, Italian seasoning, salt, black pepper, bone broth, crushed tomatoes, and diced tomatoes to the slow cooker. Stir well to combine.
  3. Cover and cook on HIGH for 2-3 hours or LOW for 4-6 hours.
  4. Once cooking time is up, stir in shredded cheddar cheese until melted. Gently mix in cooked elbow macaroni.
  5. Season with additional salt and pepper if needed before serving.
