  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 red bell pepper, sliced
  • 1 cup snap peas, trimmed
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 2 tablespoons vegetable oil (or any cooking oil of your choice)
  • Salt and pepper to taste

Instructions

  1. Rinse shrimp under cold water and pat dry. Season with salt and pepper.
  2. Prepare vegetables: wash asparagus, slice bell pepper, rinse snap peas, and mince garlic and ginger.
  3. In a small bowl, mix soy sauce, cornstarch, and water until dissolved.
  4. Heat oil in a skillet or wok over medium-high heat. Add garlic and ginger; sauté for 30 seconds.
  5. Add shrimp in a single layer; cook for 2-3 minutes until pink. Remove shrimp from pan.
  6. Stir-fry asparagus and bell pepper for 2-3 minutes until slightly softened.
  7. Add snap peas; stir-fry for another 2 minutes.
  8. Return shrimp to the pan; pour sauce over everything and stir well to coat.
  9. Cook for an additional minute until the sauce thickens.
