  • 2 tablespoons olive oil
  • 2 tablespoons salted butter
  • 1/2 cup chopped onion
  • 5 cloves garlic (minced)
  • 1.5 cups cooked corn kernels
  • 1 cup half-and-half
  • 4 oz feta cheese (crumbled)
  • Spices: chili powder, smoked paprika, salt

Instructions

  1. Prepare all ingredients: chop onion, mince garlic, crumble feta cheese.
  2. In a skillet over medium heat, melt olive oil and butter. Sauté onion until translucent (about 3 minutes), then add garlic for another minute.
  3. Add shrimp to the skillet; season with chili powder and salt. Cook for about 3-4 minutes until pink; remove from skillet.
  4. In the same skillet, add corn and smoked paprika; pour in half-and-half while stirring. Simmer for about 5 minutes until slightly thickened.
  5. Return shrimp to the skillet, mix with creamed corn, and crumble half of the feta into the pan.
  6. Serve warm with lime juice squeezed over the top and garnish with remaining feta and cilantro.
