  • 1kg Fresh Tomatoes
  • 34 cloves Garlic (skin on)
  • 1 medium White Onion (diced)
  • 240ml Chicken or Vegetable Stock
  • 1 tbsp Butter
  • Fresh Basil Leaves
  • Olive Oil, Salt & Pepper

Instructions

  1. Preheat oven to 200C (390F).
  2. Halve tomatoes, place cut side up on a baking tray, season with salt and pepper, add garlic and thyme, drizzle with olive oil, and roast for 25-30 minutes.
  3. In a pot, melt butter over medium heat, sauté diced onion until caramelized (10-15 minutes).
  4. Add roasted tomatoes (with juices), garlic (peeled), thyme, stock, and basil to the pot; simmer for 30 minutes.
  5. Blend the soup until smooth; adjust seasoning as needed.
  6. Serve warm, optionally with grilled cheese sandwiches.
