  • 8 pounds tomatillos (husks removed)
  • 4 medium white onions (cut into wedges)
  • 4 jalapeño chiles (or serrano peppers)
  • 6 cloves garlic (peeled)
  • 1 cup fresh lime juice
  • 1/2 cup chopped fresh cilantro leaves
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Arrange tomatillos, onions, jalapeños, and garlic on a baking sheet.
  2. Roast for 20-25 minutes until soft and slightly charred.
  3. Let cool slightly, then blend roasted vegetables with lime juice, cilantro, salt, pepper, and cumin until smooth.
  4. Prepare jars by washing in hot soapy water; keep warm in the oven.
  5. Fill jars with salsa verde, leaving 1/2 inch headspace. Wipe rims clean before sealing.
  6. Process jars in a water bath canner for about 15 minutes once boiling.
  7. Remove jars carefully and let cool completely before storing.
