  • 2 medium poblano peppers
  • 20 oz. (about 4 cups) white + golden corn
  • 1/2 cup finely diced red onion
  • 1/2 jalapeno (optional)
  • 1/2 cup chopped cilantro
  • 3 Tbsp. lime juice
  • 1 Tbsp. lemon juice
  • 1 tsp. sea salt

Instructions

  1. Preheat the broiler to high (500°F). Place poblano peppers on a foil-lined baking sheet and broil for 10 minutes, flipping halfway until charred.
  2. Transfer charred peppers to a bowl, cover to steam for 10 minutes, then remove stems, seeds, and skin before dicing.
  3. While cooling, prepare the other ingredients: cook corn if needed, finely dice the red onion, mince jalapeno (if using), and chop cilantro.
  4. In a large bowl, mix together corn, diced poblano peppers, onion, jalapeno, cilantro, lime juice, lemon juice, and sea salt.
  5. Chill in the refrigerator for at least 30 minutes before serving.
