Ingredients

  • 3 large strawberries (stems removed)
  • 1/3 cup water (for red layer)
  • 1/3 cup + 2 Tbsp coconut milk (for white layer)
  • 1/3 cup + 2 Tbsp water (for blue layer)
  • 1/2 tsp blue butterfly pea flower powder

Instructions

  1. For the red layer: Blend strawberries and 1/3 cup water until smooth. Pour into an ice cube tray and freeze for 30 minutes.
  2. For the white layer: Mix coconut milk with an additional 2 tablespoons of water. Pour over the frozen red layer and freeze for another 30 minutes.
  3. For the blue layer: Combine 2 tablespoons of water with blue butterfly pea flower powder until dissolved. Pour over the frozen white layer and freeze until solid (about 1-2 hours).
  4. To serve, run warm water over the bottom of the tray to release ice cubes and add them to your favorite drinks.
