  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon kosher salt
  • 1 tablespoon cinnamon
  • 1 tablespoon pumpkin pie spice
  • 1 cup butter (melted)
  • 1 (15 oz) can pumpkin puree
  • 4 large eggs
  • 1/4 cup vegetable oil
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat oven to 350°F and grease a 9×13 inch cake pan.
  2. In one bowl, combine flour, sugars, salt, cinnamon, and pumpkin pie spice for the streusel. Add melted butter; mix until crumbly.
  3. In another bowl, whisk together flour, baking powder, baking soda, remaining spices, and softened butter until crumbly.
  4. Mix half the pumpkin puree into the flour mixture. In another bowl, whisk the remaining puree with eggs, oil, and vanilla; add to dry ingredients.
  5. Layer half the batter in the prepared pan and sprinkle with streusel. Repeat layers with remaining batter and streusel.
  6. Bake for about 45–50 minutes or until a toothpick comes out clean.
