  • 1 ½ to 2 lbs potatoes (cut into large cubes)
  • 4 large onions (sliced)
  • 6 garlic cloves (sliced thinly)
  • 4 tbsp pimenta moida (Portuguese hot pepper paste)
  • ½ cup white wine
  • ¼ cup parsley (chopped)
  • 2 tbsp paprika
  • 1 tsp salt (or to taste)
  • 4 tbsp olive oil

Instructions

  1. In a large pot, combine potatoes and enough water to cover them by about 2 inches. Bring to a boil on medium-high heat and cook until fork-tender, approximately 10 – 15 minutes.
  2. In a large frying pan, heat olive oil over medium heat. Sauté onions and garlic until softened.
  3. Stir in salt and paprika; sauté for an additional minute.
  4. Add pimenta moida and white wine, then simmer until the sauce thickens slightly.
  5. Mix in fresh parsley and adjust seasoning as needed.
  6. Drain the cooked potatoes and return them to the warm pot to dry out slightly.
  7. Serve the potatoes topped with the spicy onion sauce, garnished with more parsley.
