  • 2 Tbsp olive oil
  • 5 oz blue cheese
  • 3/4 cup heavy cream
  • 2 shallots
  • 1/4 cup white wine

Instructions

  1. Trim the pork tenderloin and cut it into eight 2-inch medallions. Season with salt and pepper.
  2. In a large sauté pan, heat olive oil and 1 tablespoon of butter over high heat. Sear half of the medallions for about 2-3 minutes on each side until browned, then set aside.
  3. Melt the remaining butter in the same pan, add chopped shallots, and sauté for about 30 seconds.
  4. Deglaze the pan with white wine, letting it evaporate almost completely before adding heavy cream and blue cheese cubes. Simmer until smooth.
  5. Return the pork to the pan, cooking until firm yet slightly pink inside (about 2-4 minutes more). Garnish with parsley before serving.
