  • ½ cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 2 ½ cups + 2 tablespoons all-purpose flour
  • ½ teaspoon fine sea salt
  • ½ teaspoon baking soda
  • 2/3 cup strawberry preserves
  • 1 cup powdered sugar
  • 1 ½2 tablespoons whole milk
  • Rainbow sprinkles (for decoration)

Instructions

  1. Preheat your oven to 375°F (190°C) and line an 8×8 baking pan with parchment paper.
  2. Cream together the butter and sugar in a stand mixer until light and fluffy.
  3. Add eggs one at a time along with vanilla extract; mix until combined.
  4. Gradually add flour, salt, and baking soda; stir until dough forms.
  5. Chill the dough for about 20 minutes in the refrigerator.
  6. Press half of the chilled dough into the prepared pan evenly.
  7. Spread strawberry preserves over this layer.
  8. Place remaining dough on top, pressing gently to seal the preserves.
  9. Bake for 25–28 minutes until golden brown.
  10. Cool completely on a wire rack before icing with powdered sugar glaze and decorating with sprinkles.
