  • 2 1/2 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 1 1/4 cups cold unsalted butter
  • 5 cups chopped peaches (about 78 peaches)
  • 6 tablespoons heavy cream
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F (180°C). Grease a 9×13-inch baking pan or line with parchment paper.
  2. In a food processor, mix flour, granulated sugar, and salt. Add cold butter; pulse until crumbly. Reserve 1½ cups for topping and press the rest into the pan.
  3. Bake crust for about 15 minutes until lightly browned.
  4. Combine peaches with sugar, flour, cinnamon, and salt in a bowl. Mix heavy cream (and vanilla if using) into the peach mixture.
  5. Pour filling over the warm crust and sprinkle with reserved crumble topping.
  6. Bake for about 45 minutes until bubbly and golden brown.
  7. Cool completely on a wire rack before cutting into squares.
