  • 1 ½ tbsp Avocado Oil
  • 2 ½ lb Pork Tenderloins
  • 1 tsp Salt
  • ½ tsp Pepper
  • ¼ cup Yellow Onion (thinly sliced)
  • 1 tsp Fresh Rosemary (minced)
  • ⅓ cup Brown Sugar
  • 2 tbsp Apple Cider Vinegar
  • 1 tbsp Dijon Mustard
  • 3 Large Peaches (pitted, peeled, and diced)

Instructions

  1. Preheat your oven to 375°F.
  2. Heat avocado oil in a cast iron skillet over high heat. Season the pork with salt and pepper, then sear in the skillet for about 3-4 minutes on each side until browned. Remove from the skillet and set aside.
  3. In the same skillet, sauté onions and rosemary until lightly golden, about 1 minute.
  4. Add brown sugar, apple cider vinegar, mustard, and diced peaches; stir well.
  5. Return the seared pork to the skillet with the glaze and bake in the oven for approximately 10 minutes until the internal temperature reaches 145°F.
  6. Let the pork rest for 5-10 minutes before slicing and serving with the glaze.
