  • 12 oz smoked sausage
  • 8 oz farfalle pasta (bowtie)
  • 1 tbsp olive oil
  • 1/2 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Cajun seasoning (to taste)
  • Fresh parsley or green onions for garnish

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high.
  2. Add sliced sausage and brown for about 4–5 minutes; remove and set aside.
  3. In the same pot, sauté diced onion until soft (2–3 minutes), then add garlic and cook for an additional 30 seconds.
  4. Return sausage to the pot and add farfalle pasta, diced tomatoes (with juice), chicken broth, Cajun seasoning, salt, and pepper. Stir well.
  5. Bring to a boil, reduce heat to simmer, cover, and cook for 12–14 minutes until pasta is tender.
  6. Stir in heavy cream and shredded cheese until melted and smooth. Adjust seasoning if needed.
  7. Serve hot garnished with fresh parsley or green onions.
