  • 2 boneless, skinless chicken breasts
  • 1 cup shredded Monterey Jack cheese
  • 1 medium yellow onion
  • 3 garlic cloves
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Spices: paprika and Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the spaghetti according to package instructions until al dente; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season the chicken with paprika, Italian seasoning, salt, and pepper. Cook for 5-7 minutes until golden brown; remove from skillet.
  3. In the same skillet, melt butter, sauté onions for 3-4 minutes, then add garlic for another 30 seconds.
  4. Add chicken broth and heavy cream; simmer gently for about 5 minutes until thickened.
  5. Return the spaghetti and chicken to the skillet; toss together until well coated in sauce.
  6. Sprinkle cheese on top; cover until melted (2-3 minutes).
  7. Garnish with parsley and serve warm.
