  • 1 tablespoon kosher salt
  • 1 teaspoon instant yeast
  • 2 tablespoons olive oil (plus extra for shaping)
  • 1 3/4 cups room-temperature water
  • 2 1/2 cups organic tomato sauce
  • 2 lb low-moisture mozzarella cheese
  • Assorted veggie/meat toppings (10 cups)

Instructions

  1. In a large bowl, mix flour, sugar, salt, and yeast. Add olive oil and water, stirring until a rough ball forms.
  2. Knead the dough until smooth for about 3-4 minutes. Let it rest for 15 minutes.
  3. Divide the dough into ten balls, coat with olive oil, and let sit covered at room temperature for 30 minutes before refrigerating for three hours or overnight.
  4. Preheat grill to medium-high heat. Roll out each dough ball into rounds of about 6–7 inches in diameter.
  5. Grill three to four pizzas for about 90 seconds per side; add sauce, cheese, and toppings after flipping.
  6. Cook covered on medium-low heat for another five minutes until cooked through.
