  • Juice of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a medium saucepan over medium heat. Sauté the diced onion for 2-3 minutes until softened, then add minced garlic and cook for another 30 seconds.
  2. Stir in rice to coat with oil and aromatics; toast for about 1 minute. Pour in chicken broth, lemon juice, lemon zest, oregano, salt, and pepper.
  3. Bring to a boil, then reduce heat to low and cover tightly. Simmer for 18-20 minutes without lifting the lid.
  4. Remove from heat and let sit covered for an additional 5 minutes. Fluff rice gently with a fork before serving.
