  • 4 boneless, skinless chicken breasts
  • 8 slices of prosciutto
  • 8 fresh sage leaves
  • ½ cup all-purpose flour
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • ½ cup chicken broth
  • ½ cup white wine (optional)
  • Salt and pepper to taste

  1. Place each chicken breast between plastic wrap and pound to ½-inch thickness. Season with salt and pepper.
  2. Lay two slices of prosciutto over each breast, top with a sage leaf, and lightly dust with flour.
