  • 8 oz fresh mozzarella cheese, sliced into rounds
  • 15 oz whole milk ricotta cheese
  • 1 cup fresh basil leaves, chopped
  • 14.5 oz canned diced tomatoes, drained

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper. In a skillet over medium heat, cook the chicken for about 6-7 minutes per side until golden brown and cooked through. Let rest before slicing thinly.
  3. In a bowl, mix diced tomatoes with half of the chopped basil; season with salt and pepper.
  4. Layer the ingredients in the baking dish: spread tomato sauce at the bottom, add noodles (if using), ricotta dollops, sliced chicken, mozzarella slices, and remaining basil. Repeat layers until all ingredients are used.
  5. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 15 minutes until bubbly and golden.
