  • 4 boneless, skinless chicken breasts
  • 1 cup Irish whiskey (such as Jameson)
  • 1 cup heavy cream
  • 1 medium onion
  • 3 cloves garlic
  • Fresh thyme leaves
  • Olive oil, butter, Dijon mustard, salt, and pepper

Instructions

  1. Season chicken with salt and pepper. In a large skillet over medium-high heat, cook chicken in olive oil for 6-7 minutes per side until golden brown.
  2. Remove chicken and cover to keep warm. In the same skillet, sauté chopped onion for 3-4 minutes, add minced garlic and cook for an additional minute.
  3. Pour in whiskey and simmer for 5 minutes; add chicken broth and simmer for another 5 minutes.
  4. Lower heat, stir in heavy cream, mustard, thyme; simmer to thicken for about 4 minutes.
  5. Return chicken to skillet, spoon sauce over it and simmer for another 2-3 minutes.
  6. Serve garnished with parsley alongside your favorite sides.
