Homemade Chicken Noodle Soup is the epitome of comfort food, especially on chilly days or when you’re feeling under the weather. This one-pot recipe combines tender chicken, fresh vegetables, and aromatic herbs, simmered to perfection in a rich broth.

  • 2 Tablespoons olive oil
  • 1 cup onion (diced)
  • 1 cup carrots (peeled & diced)
  • 1 cup celery (finely diced)
  • 1 teaspoon minced garlic
  • 2 quarts chicken broth (8 cups)
  • 1 Tablespoon chicken base (better than bouillon recommended)
  • 2 Pounds boneless skinless chicken breasts
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • ½ teaspoon fine sea salt (or to taste)
  • ¼ teaspoon black pepper
  • 1 Tablespoon fresh parsley
  • 4 cups egg noodles

Instructions

  1. Heat olive oil in a large stockpot over medium-high heat. Sauté diced onion, carrots, celery, and minced garlic until onions are translucent (about 5–7 minutes).
  2. Stir in chicken broth and better than bouillon; whisk together.
  3. Add chicken breasts, thyme sprigs, bay leaves, salt, and pepper; mix well.
  4. Bring to a boil over high heat, then reduce to low and let it simmer for 45 minutes until chicken is fork-tender.
  5. Remove bay leaves and thyme; shred chicken into bite-sized pieces before returning to pot.
  6. Bring soup back to a boil; add egg noodles and cook for about 10 minutes until tender.
  7. Serve warm with fresh herbs on top.
