  • 1 tbsp chopped fresh basil, plus extra for garnish
  • 8 eggs
  • 1/4 cup plant-based milk
  • 1/2 tsp salt
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat 1 tablespoon of ghee or avocado oil over medium heat. Sauté diced onion until translucent, then add garlic and zucchini; cook until tender.
  3. Stir in spinach until wilted and remove from heat.
