  • 1 tablespoon vegetable oil
  • 1 1/2 teaspoon kosher salt
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon ground ginger
  • 20 ounces canned pineapple chunks in 100% juice
  • 1/2 cup light soy sauce
  • 1/2 large sweet onion (diced, about ⅔ cup)
  • 1 tablespoon cornstarch
  • 1 1/2 tablespoons cold water

Instructions

  1. Heat vegetable oil in a skillet over medium-high heat.
  2. Combine salt, paprika, onion powder, and ginger; rub evenly over the pork loin.
  3. Sear pork loin in the skillet until browned on all sides (about 3-4 minutes each side).
  4. In a mixing bowl, combine diced onions with soy sauce and pineapple juice.
  5. Layer half of the pineapple chunks in a slow cooker; place seared pork on top and add remaining pineapple and onion mixture.
  6. Cover and cook on low for 5 hours or until tender.
  7. Strain liquid from cooker into a saucepan; simmer and thicken with cornstarch slurry.
  8. Serve shredded pork topped with sauce and reserved pineapple.
