  • 4 cloves garlic
  • 3/4 cup Parmesan cheese (shredded)
  • 1/2 cup olive oil
  • 1/4 cup pine nuts
  • 4 halibut steaks
  • 1/4 cup white apple vinegar
  • Salt and pepper (to taste)

Instructions

  1. In a food processor, blend basil, garlic, Parmesan cheese, olive oil, and pine nuts until smooth. Reserve ¼ cup of the pesto for later.
  2. In a sealed bag, mix the remaining pesto with white apple vinegar. Add the halibut steaks and marinate in the refrigerator for 1 hour.
  3. Preheat the grill to medium-high heat.
  4. Remove halibut from marinade and grill for 4-5 minutes per side until opaque throughout.
  5. Brush with reserved pesto before serving.
