  • 8 cups onions
  • 3 red bell peppers
  • 3 green bell peppers
  • 3 cups white sugar
  • 2 cups apple cider vinegar
  • 3 tablespoons celery seed
  • 3 tablespoons mustard seed
  • 1 tablespoon salt

Instructions

  1. Prepare ingredients: Wash, core, chop green tomatoes; peel and dice onions; halve and chop bell peppers.
  2. In a large pot, combine all vegetables with sugar, vinegar, celery seed, mustard seed, and salt.
  3. Bring to a boil over medium heat; reduce to simmer for about 30 minutes until thickened.
  4. Sterilize canning jars in boiling water. Ladle hot relish into jars, leaving 1/4 inch of headspace.
  5. Seal jars while hot and process in a boiling water bath for 15 minutes.
