Ingredients

  • 1 gallon green tomatoes
  • 1 medium head cabbage
  • 5 medium bell peppers (mixed colors)
  • 1 medium onion
  • 6 hot pepper pods
  • 3 cups vinegar
  • 2 cups sugar
  • 2 tablespoons plain salt

Instructions

  1. Chop green tomatoes, shred cabbage, seed and chop peppers, and chop onion.
  2. Combine all chopped ingredients in a large pot with salt; stir well.
  3. In another pot, boil vinegar and sugar together; pour over vegetable mixture.
  4. Cook on medium heat for 20 minutes.
  5. Fill sterilized jars with hot chow chow and process in boiling water for 10 minutes.
  6. Allow the relish to sit for at least 4 weeks before enjoying.
