  • 1.2 kg Sweet Potatoes
  • 6 tbsp Unsalted Butter (melted)
  • 3 large cloves Garlic (finely grated)
  • 1 tbsp Fresh Rosemary (finely diced)
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 45g Parmesan Cheese

Instructions

  1. Preheat your oven to 180C/350F.
  2. Peel and slice sweet potatoes into rounds about 3mm thick.
  3. Brush muffin tray with melted butter; combine remaining butter with garlic, rosemary, salt, and pepper in a mixing bowl.
  4. Toss sweet potato slices in the mixture until well-coated.
  5. Stack potato slices in muffin cups, brushing with leftover butter mixture.
  6. Cover with foil and bake for 35 minutes; then remove foil and bake at 200C/400F for an additional 15 minutes until charred lightly.
